I've been around for some years longer than you, and was a dedicated rocker for a lot of them; and the only concert that I remember getting canceled was when Sly & the Family Stone just didn't show up for a concert in Grant Park, Chicago, causing a riot that made headlines (and I was there, though not rioting). They may well have been hammered, but they weren't sick.
When I worked for a record store/Bass Tickets for awhile in the 80's, I remember one show being cancelled for illness. I do not remember the artist (Peter Gabriel maybe?), but he had laryngitis. He finished the tour though and did 'rain check' shows rescheduled for the end of the tour so he did make it up to everyone.
Yale Bowl, 1974 or so, Ian Anderson had laryngitis so Jethro Tull performed without him. Fuckers should have cancelled, because Jethro Tull was Ian Anderson.
My husband told me about the time he saw Fleetwood Mac in the late 70s or early 80s. After they arrived at the show it was announced last minute that Lindsay Buckingham would not be performing that night (no reason given IIRC, he was either sick, drunk, or on the outs with the rest of the band). The show went on with a substitute, but they could not do a bunch of the songs he was prominently known for.
I also once saw Dylan perform with the Dead. Well, actually it was mostly the Dead. For the last set they practically wheeled out a senselessly drunk Dylan and set him in front of what I suspect was a dead or nearly unamplified mike where he basically stood for the last 40 minutes of the show. At the end of it, my boyfriend and myself agreed they should have just cancelled Dylan, it was so embarrassing.
